Nicole Hamaker started blogging while living in Sicily as a way to share her experiences with family and friends. She found herself sharing recipes more often than travel photos and soon turned into a full-fledged food blogger. Now back in the states, she spends most of her time cooking, writing recipes, and photographing food for Pinch My Salt, which is about to turn four years old.

I can dice and chop alright but would love to learn the correct and fastest way to do this. You would think after so many years I would have come up with an answer but no. But maybe its my knives. Maybe if I learned the correct knife to use.

I need to learn how to cook ribs. My family loves barbecued ribs but the only time we eat them is in a restaurant which gets expensive!! Whenever I make them they're more like barbecued shoes!!! lol

Making it the right consistency-not too sticky, not too tough, and also how to roll it out evenly. I also am not good at using shortening. Weird, I know. It's such a mess though!

I'm not sure if this qualifies as a kitchen "skill" but I need to learn organization. My cooking is pretty good; great if you go by the amount of leftovers I have. But I think I have too many pots, pans, casserole dishes, etc. I never seem to put them in the same place twice because I run out of room.

Shirley Hodge - I learned to cook from my grandmother during WWII when cooking was a real challenge because of shortages of everything and rationing so I have about 65 years cooking experiences under my belt. I cannot think of anything more I would like to learn. I think the skill I had the hardest time with was making puff pastry. It takes the patience of Job and total determination. I did learn though then along comes the refrigerated sheets of puff pastry which I admit, if you by the all butter premium brand is as good as I can make. Who knew.
As for the pot roast dillema I found that if you cook it with salt only for a couple of hours by any method you choose as long as you use sufficient liquid then cover tightly and let stand for at least 24 hours in the fridge and re-cook it for another 2-3 hours with whatever additives you want you will have a tender, lucious roast. I think the standing allows it to mellow and by only adding the flavoroids such as garlic, onions, veggies or herbs in the last half of the cooking time the flavors are fresh and the meat is at optium tenderness. There are many dishes that profit by standing at least 12 hours (like my potato salad) to 24 hours.

I'd like to learn more about how to handle kitchen knives, specifically slicing, chopping, dicing, cutting, etc. all without cutting myself. I love watching the cooking shows where the chef's are using knives so expertly. It's my dream to be just as efficient!

I cook for my husband who likes bland food, myself who likes colorful and lively food (but I'm pregnant so I can't go nuts) and my 16 month old toddler who will throw anything on the floor if it so much as looks funny.

My biggest thing is my baking. I LOVE IT! Especially from scratch. My biscuits always come out dry. My crusts are not so crusty. Baked goods are my favorite things. Especially around the holidays and every year I wind up on the baking aisle shopping for the boxed stuff.
