3-Minute Gluten-Free Brownie for One

The popular mug or jar dessert goes gluten-free, thanks to a reader request!

Not only is this decadent 3-Minute Gluten-Free Brownie for One simple, quick and tasty, it’s also perfectly portioned for one (or 2 small) servings, so there’s built-in control when it comes to a sweet treat.

Stir it up, micro-cook it for a minute, then gobble it up!

3-Minute Gluten-Free Brownie for One


3-Minute Gluten-Free Brownie for One

Prep time:  2 mins
Cook time:  1 min
Total time:  3 mins
Serves: 1 or 2
This recipe is free from: gluten, dairy (optional), soy, peanuts, tree nuts.
  • 1 Tablespoons solid fat (If you eat dairy, use butter; if you are dairy-free like me, use a plant-based butter substitute or coconut oil.)
  • 2 Tablespoons light brown sugar, firmly packed (coconut sugar does not yield great results)
  • 1 large egg, lightly beaten
  • ½ teaspoon pure vanilla extract
  • 1 Tablespoon unsweetened baking cocoa
  • 2 Tablespoons gum-free gluten free all-purpose flour like Gigi's Everyday blend or King Arthur Multipurpose blend (OR use 1 Tablespoon non-starch flour, like sorghum or rice flour + 1 Tablespoon starch like tapioca, potato starch or cornstarch)
  • Pinch of baking powder
  • Pinch of salt
  • 1 - 2 Tablespoons chocolate chips or chunks (Be sure your chocolate is gluten and other allergen free, per your own needs. Enjoy Life Foods makes chocolate chips and chunks free from the Big 8 Food Allergens.)
  1. Add fat and sugar to a mug (8 ounce or larger; a pint-size Mason jar works well)
  2. Heat in microwave on high power 30 seconds; remove from microwave; stir.
  3. Add egg and vanilla; whisk with fork until mixture is uniform.
  4. Stir in cocoa powder, flour, baking powder and salt, mixing with the fork to be sure the batter is smooth.
  5. Add chocolate chips; stir.
  6. Microwave 1 minute, check for doneness (do not overcook or you’ll have a little hockey puck in a mug).
  7. Microwave more if needed, in 15-second increments.
  8. Top with ice cream (dairy-free or dairy-full, whichever suits your needs) and other toppings of your choice like fudge or caramel sauce and additional chocolate chips, sprinkles, etc.
