5. Oysters.
Thanksgiving food's all about what the pilgrims could scrounge -- and oysters were the cheapest, most abundant food of all back then. Oyster stew's traditional, but I like starting off on the half shell with mignonette granita as a refreshing counterpart to all the richness to follow, and it makes a grand excuse for popping some bubbly. (What? It's a holiday.)

4. Mashed Potatoes.
My mom makes something she calls "triple dairy" and I call "triple bypass" mashed potatoes: Butter, sour cream or crème fraiche and a dollop of soft cream cheese. They're definitely not the kind of boring spuds that recede into the distance on Thanksgiving table (though they may shorten my life span some; I'm OK with that). Jack them up with some horseradish and you've got the perfect match for the rich stuff and the sweet stuff.

3. Brussels Sprouts.
They're one of those foods you just either love or hate. Me, I love. Especially Brussels sprouts with pecans and gorgonzola, Brussels sprouts with bacon and pine nuts, or Brussels sprouts hashed with lemon.

2. Gravy.
As a child, I didn't really care that Gravy Train was a brand of dog food -- it still sounded sort of good to me. I think it was being exposed to my Texas Granny's cream gravy over biscuits at an early age (yeah, I'm lucky -- you should taste her fried okra). But I'm pretty happy with any homemade gravy whether brown, giblet, ham, redeye, or onion. Alas, copious ladlefuls of gravy doesn't make turkey any more tasty for me. Boo.

1. Stuffing.
Stuffing or dressing; cornbread or white bread; oysters or chestnuts: I love them all. I know it's just old bread, heavy seasoning and some fat but by the same curious magic that turns old bread into French toast, stuffing is enchanted.

True story: I once stuffed stuffing with stuffing. I was trying out a few pre-Thanksgiving recipes and had more also-rans than I knew what to do with. So I lined ramekins with stuffing, baked it off to make a crisp "pie shell," then added a layer of cooked greens and another layer of stuffing. Because that's how I roll. I might crave stuffing even more than these guys:

Never associated oysters with Thanksgiving, maybe this should be a new tradition. As for me, I love love LOVE yams with marshmallow topping. Yummm

Just noticed that my oysters are here and causing a ruckus. I think it's fabulous. Thanks for featuring them! And I would (uh, you know, theoretically, ahemahem) totally drink gravy. Happy Thanksgiving, everyone!

But I'd be willing to try it. Here in San Francisco you can buy smoked oysters at Safeway, in tins next to the tuna and such.

I'm sad that this year I will not be with my side of the family to dig into Oyster stuffing.  I will be with the in-laws and their traditions.  While I'm curious about what they may be, it breaks my heart to think that I won't see my mother ever-so-NOT daintily dig into her stuffing:-(

Definitely the stuffing for me! I've never actually tried oysters...sounds like I may need to try an "adventure" ingredient soon.

By far stuffing is my favorite thing about Thanksgiving.  I've never made it any other time of year (why not?)  But it wouldn't be Thanksgiving without it.  I'm with you on the brussels sprouts, potatoes, and gravy too, but not sure about the oysters.

I can and have eaten whole meals of just stuffing.  Probably not the healthiest thing to be doing, but I love the stuff.  Thanksgiving just isn't Thanksgiving without stuffing.  My brother's family always makes four varieties of stuffing each year, and one of them is their signature oyster stuffing.  I can't stand the stuff.  I like just about any stuffing that doesn't contain oysters or nuts though.

Mashed potatoes are great, as long as they aren't flavorless or tasting only of butter.  My mashed potatoes usually end up overly laden with other ingredients, but that's how I like them.  Sometimes I'll make them with bacon, cheese, green onions, ranch, and sour cream.  Other times I'll do the whole garlic/herb thing.

My mom makes a great spiced apple cider, but she can only be conned into making it every few years.  Maybe that's more of a Christmas thing than Thanksgiving for most families.

My husband insists on green bean casserole every year.  Personally I'd rather have a broccoli and cauliflower casserole with cream cheese, garlic, and breadcrumbs.

When I found out they were tradition for lots of people I felt cheated! I may not wait till next Thursday for oysters and bubbly. I love the holidays!

Oysters crack me up - it's like Cliantro, people either love them or hate them! Definitely a testiment to sentiment - I don't think that I actually like the smoked oysters, they have serious texture problems. But we always have them, it's how I know it's Thanksgiving. Usually, RAW for me - and those I can't get enough of!

Um - it's not Thanksgiving without smoked oysters. Seriously!  (and that's actually probably relatively authentic!)

For me, it's Grandma Celia's Hazelnut Pie ( http://alyssaroyse.wordpress.com/2009/11/19/hickor... ). My favorite pie in the world, and for some reason I only ever make it on Thanksgiving, which makes no sense at all.

I actually had a lot of fun gathering recipes for the November issue of JUST CAUSE Magazine. I had this crazy idea that I wanted to figure out what was authentic, and what the first Thanksgiving was really like. We also asked readers from around the world to submit recipes from their favorite cultural celebrations ( http://bit.ly/8gZoi8 )- most of which I tried and were delicious.

(That second link is to the online magazine, which you can read - and subscribe to - for free. I know it seems spammy, but the recipes are really good. And the articles about the first Thanksgiving and the food they ate are fascinating, at least to me!)

I love Thanksgiving. All food and family and friends, no obligatory gift-giving!

I like the crisp edge on stuffing - one more reason not to put it inside the bird. Maybe I should try it in one of these ( http://www.cooking.com/products/shprodde.asp?SKU=6... ) next time.

The other thing about stuffing stuffing with stuffing: You can't not giggle when you say it.
