Cabbage Stew
The focus is on good health all this month at Blogher, so I'm doing my part with some tips for choosing foods that are uber-nutritious. I've already told you why sweet potatoes are better than potatoes and how dried beans are a good choice for health. This time I'm going to focus on cabbage, not only one of the world's healthiest foods, but also a member of the family of cruciferous vegetables that have been proven to have cancer fighting properties. Besides that, cabbage is inexpensive, it's delicious raw or cooked, and it's versatile. Write *cabbage* on your grocery shopping list right now, and here are some great ways to use it.

Salads with Cabbage
Nami Nami (from Estonia) discovers Coleslaw and likes it.
For a different take on coleslaw, try Spicy Coleslaw with Cilantro and Jalapenos from Homesick Texan.
A cabbage classic is the Simi Salad (aka Ramen Noodle Salad) from Andrea's Recipes.

Soup or Stew with Cabbage
The Blog That Ate Manhattan makes Cabbage Borscht (with or without beets).
There are two healthy ingredients in Purple Cabbage and Sweet Potato Soup from Karina's Kitchen.

I love the sound of Larb (Thai salad wrapped in cabbage leaves) from Sidewalk Shoes.
Pork Stuffed Cabbage Rolls from Simply Recipes sound fantastic, with paprika adding extra flavor.
At French Kitchen in America, Mimi makes Braised Pork Chops with Cabbage, which she says is quick and tasty.
I'm quite intrigued by the Cabbage Nori Rolls from Fat Free Vegan Kitchen.

Don't forget about kimchi!

For the more adventurous, the baechu variety of Korean kimchi is made with cabbage. It's spicy and delicious, and extremely healthy to boot.

Kimchi is easier to buy at international/Asian grocery stores than it is to make at home. You can also try it at any Korean restaurant.

Sauteed

I love just sauteeing red cabbage with a bit of oil and soy sauce. SO delish. And surprisingly filling.

I love cabbage!

My mom used to boil a ham bone with cabbage and we'd eat it with butter, salt and pepper. I make a cabbage-heavy minestrone that I'm very fond of as well.

Another type of cabbage-stuffed roll that's really tasty is bierocks. AllRecipes.com has a recipe called Pam's Bierocks that I make fairly often. I may have to whip up a batch this weekend.
