Affordable School Lunches

I am good at many things mom-related, but I stink, stink, stink at packing school lunches. Thank goodness for Jessica at Life as a Mom, because sometimes you just need IDEAS, and she's got them coming out of her ears.

Her most interesting tip to me? Pay attention to presentation. I always just throw stuff in baggies willy-nilly, so no wonder my kid brings it right back to me at the bottom of the sack. (sob) Jessica writes:

Fruits that kids love? Try berries, applesauce, apple slices, pink grapefruit, pineapple spears, and grape clusters. Make things as appealing and as easy to eat as possible: remove the berry stems, treat the apple slices with lemon juice to prevent browning, section the grapefruit, cut fresh pineapple, and cut the grapes into small clusters.

I love making my own "lunchables" by cutting up cheese and lunch meat to fit crackers, also changing up the bread for sandwiches works wonders, i.e whole wheat hot dog buns work great for cost efficient hoagies. Ever have a bun or two leftover from a BBQ? Freeze them until you need it for such an occasion ;)

So far so good on the school lunches for the year. Definately prefer to pack a lunch vs leaving my child's nutrition up to the school cafeteria.
