Almond porridge with strawberries

With this breakfast I have achieved something I never thought possible: Arthur got excited about porridge again. He's hated porridge for a while, probably because we had it every day for a long time. He's been eating regular cereals instead: Rice Krispies, Shreddies - you know, the sugary ones that aren't as bad as the sugary ones. But the promise of almond porridge with strawberries and syrup made him positively gleeful, he even helped me make it. Adding ground almonds to porridge is an idea I respectfully nicked from a recipe I saw posed by Organix, as part of their #NoJunk campaign. I got behind this particular social media campaign, as I think a lot of parents, me included, could do with some inspiration when it comes to getting healthy yet simple and delicious meals on the table. This idea of adding almonds to your morning bowl is a simple but brilliant one. What a great way to get extra protein of a morning.
It adds a nice flavour, a little texture too. My children literally could not get this into their gobs fast enough, I left the room to take a picture of my portion, above, and returned to find Bea covered, head to toe in the stuff. But smiling, and with an empty bowl. Artie had an empty bowl too. I was shocked!
Rejoice! King Arthur will eat healthy cereals once more! The kingdom shall be saved!
What do your little princes and princesses eat for breakfast? Got any healthy brekkie ideas you'd like to share with the class? I have used proportions as opposed to amounts below. To make perfect plain porridge, I use 1 part porridge to 2 parts whole milk. I have simply replaced 1/4 of porridge with ground almonds.
Serves: 3 adults (or 1 adult and 2 children) - if serving 4 simply use a larger glass or mug with the same proportions as below
Prep time: None
Cook time: 5-7 minutes
Total time: 7 minutes
3 parts porridge oats / 1 part ground almonds (for this serving I used one glass 3/4 full of oats, then 1/4 of ground almonds)
The same glass, filled twice with whole milk
Tablespoon of maple syrup (or honey), plus more to serve
About 8 strawberries, hulled and sliced
- Pour porridge and almonds into pan. Add milk and set over high heat, giving the odd stir.
- When it comes to the boil, turn down to simmer for a few minutes. Stir well to release the creaminess.
- Add the syrup or honey. Slice strawberries to serve on top and dribble syrup over the top.
