I love nutella. I really, really do. I lvoe baking with it. I love it on bread. I love it for a few sneaky tastes on its own… you get the idea. I’m not really thrilled with the amount of sugar in it though and so I thought it would be a good idea if I gave it a go on my own AND my favourite nuts are almonds so I was able to do a little changeroo there as well. Shockingly easy and I’m pretty happy with its ‘healthiness’. No, this isn’t an everyday treat but it is yummy and fun. It’s also a super gift. I’ve made it a couple of times in the past few weeks and folks are coming back for more already. Ok, I’m an enabler. I started with 3 cups of whole almonds and I toasted them in the oven until they were slightly browned. Let them cool for a minute and process until fine crumbs.Add: 2/3 cup cocoa, 3/4 cup coconut oil, 1/4 cup cocoa nibs, 1 tsp vanilla, dash sea salt and 3/4 cup maple syrup.Blitz and then blitz some more. Then blitz longer until you think your mixture will never resemble regular nutella.Delicious! I call it ‘Almontella’. I know-right. Happy, happy,
