I love Mac-n-Cheese

   In my humble opinion, I think homemade Mac-N-Cheese is the best comfort food on the planet.  Here is my version of that comfort!

Quick and Easy and Creamy Mac-N-Cheese Casserole!

INGREDIENTS:

2 LBS OF MACARONI NOODLES( I like to mix it up with shells too)
1 CAN (16 OZ) OF DICED TOMATOES (UN- drained)
½ BLOCK at ROOM TEMPERATURE VELVEETA CHEESE
1 CUP OF MILK
½ CUP SHREDDED MOZZARELLA CHEESE(or what ever you have on hand)
1 TSP EACH ...THYME , GARLIC POWDER , ITALIAN SEASONING MIX.
2 TSP OF COURSE KOSHER SALT
1 TSP OF COURSE BLACK PEPPER
½ TSP OF RED PEPPER FLAKES
2 TBS OF OLIVE OIL
¼ OF SEASONED BREAD CRUMB MIX

DIRECTIONS:
BOIL NOODLES ACCORDING TO PACKAGE.
DRAIN.
ADD ALL INGREDIENTS EXCEPT FOR ..MOZZARELLA, OLIVE OIL, BREAD CRUMBS...MIX WELL! It's OK if all the Velveeta does not melt. Chunks are good:)
PLACE IN A CASSEROLE DISH
TOP WITH IN ORDER ... MOZZARELLA CHEESE, OLIVE OIL , BREAD CRUMBS, AND LITTLE MORE SALT AND PEPPER.

BAKE AT 350 FOR 20-25 MINS UNTIL ALL IS MELTED.
THEN PLACE UNDER THE BROILER FOR ABOUT 5 MIN TO GET A GOLDEN BROWN TOP.
