Apple Crumble with Homemade Fruit and Nut Granola

Celebrating fall with an easy to prepare dessert, Apple Crumble. I started the crumble filling by preparing a light caramel and flavouring it with vanilla bean, cinnamon, nutmeg and Calvados (apple brandy). I've also left the skin on the apples, a tip I picked up from Gordon Ramsay, "the flavour is in the skin". Not only does it enhance the apple flavour but it also makes the preparation even easier. I've used two types of apple in the filling, Honey Crisp and Granny Smith and also added cranberries. I prepared a homemade Fruit and Nut Granola and added it to the buttery topping. The crunchy texture is a wonderful contrast to the tender fruit.
I'm not sure which I enjoy more, apple crumb straight out of the oven with a dollop of freshly whipped cream or the intoxicating aroma of baked apples and cinnamon wafting throughout the house.
What I do know for sure, crumbles are the perfect way to celebrate fruit when it's in season.
