Apple Pie - Easy Mini Apple Pie Recipe

Guys, I did it - I made an apple pie! Okay, mini apple pies to be exact, but regardless, I made them. By myself. From scratch...including the dough. Yes, the dough! As I mentioned on Monday, we went apple picking in Julian a couple of weekends ago, and ever since two big bags of apples have been sitting on the counter waiting to be used. And so I decided to bake my first apple pie. Let it be known - I am no baker, and I can barely cook. So naturally I decided to take on an apple pie. Because I was running short on time (I wanted them to be done before my mom and aunt came over for lunch) I didn't want to spend time peeling 1,000 apples to make a big pie. Plus, I wanted them to be able to take a piece with them without making a mess in the care. Enter mini apple pies. I found this mini apple pie recipe and adapted it to fit my needs. Enjoy, friends! Mini Apple Pie Recipe (yields 9 mini pies) Ingredients for dough: - 1 cup of flour - 5 tablespoons of butter, cold and cubed - 3 tablespoons of cold water - 1 teaspoon of salt - 1 teaspoon of sugar (note: remember that 'tsp' means teaspoon, not tablespoon. My dough may or may not have turned out a bit salty because I misread the recipe and dumped a tablespoon into the mixing bowl. oops?) Ingredients for yummy apple filling: - 8 mini apples of different varieties - 1/4 cup of white sugar - 1/4 cup of brown sugar - 1 tablespoon of flour - 1 teaspoon cinnamon - 1/2 teaspoon nutmeg - 1 tablespoon vanilla extract - pinch of salt Directions: The Dough - Add flour and cubed butter into a mixing bowl and blend together with a fork - Mix in salt and sugar, followed by the cold water. Add more water a tiny bit at a time until the dough comes together. Wrap up that dough in a little saran wrap and put in fridge for 20-30 minutes Apple Filling - Peel and chop 8 mini apples - Mix brown sugar, white sugar, cinnamon, nutmeg, flour, salt and vanilla extract together in the mixing bowl - Add those apples to the above mixture Putting it Together - Get the dough out from the fridge. Easy enough, right? - Place 3/4 of the dough between two lightly floured pieces of wax or parchment paper and roll out until it is pretty thin - Use a small bowl (I used a custard bowl) to cut out little circles of dough that are slightly larger than the size of the circles in the cupcake tin - Place circles into an un-greased cupcake tin, using a fork to poke little holes in the bottom - Fill them up with apple mixture! - Roll out the remaining 1/4 of dough and cut small strips to use as the lattice top. I used 5 strips per mini pie - Bake those yummy delights for 35-40 minutes at 375. Enjoy while warm ... or the next day when you're stressed! Linked up with Tasty and What I'm Loving Wednesday.
