Apple sauce and bbq turkey meatballs

Yes, you read that right.  Apple sauce and BBQ sauce.  In meatballs.

 It’s seriously the most delicious combination that I’ve ever tried.

After realizing that I only needed half of the apple sauce I had on hand to make these muffins, I thought that it might taste great in the meat balls I still had to prep.  And what goes well with turkey and apple sauce?  Obviously, the answer is BBQ sauce.

These are sweet in the most amazing way.  I love the flavor combinations and the softness.  Rather than fry these, I baked them and then froze most of them.  I love having home made meat balls on hand when it’s been a busy day and we don’t have the energy to cook something.  I just throw the frozen meatballs in a sauce pan with some tomato sauce and let them defrost in the warmth and delicious flavor of the sauce, while we boil some whole wheat pasta.

Now there are a couple of ways to go about these: you can fry them on a couple of sides for a minute or two before you throw them in the oven, or just put them in as they are.  I use the cookie scoop to make sure they’re somewhat similar in size and let them bake for about 20 minutes, then set them out to cool before freezing them.

You can eat them in tomato sauce over pasta, or, if you’re a huge fan of spinach like I am, these go absolutely great with some spinach.

I also make these with 3 lbs of turkey meat, but you can easily cut the recipe in third if you don’t want two zip lock bags of meat balls in your freezer (I have no idea who would not want that).
