1 small-medium avocado
1-2 medium tomatoes
½ Romaine lettuce head
1 small can string beans or corn (drained)
Prepared avocado vinaigrette (see post on Vinaigrette for Avocado Salad)
Thinly chop the lettuce and put it in a bowl.
Seed tomatoes and cut into small chunks, and add them to the bowl.
Pour in the string beans or corn, and put in the bowl.
Cut the avocado in medium size pieces, and add also to the bowl.
(Do not toss or turn the vegetables until you have added the vinaigrette.)
Just before serving, add the vinaigrette to the vegetables, and mix all the vegetables with the vinaigrette well.
Serve right away!
