Bacon and Potato Salad
I love my mom’s traditional potato salad with boiled eggs but we like to mix it up. The loaded-baked-potato flavor makes it the perfect side for grilled steak!
6 to 8 medium potatoes (about 3 pounds), peeled and cut into 1-inch cubes
1/2 lb. bacon, cooked and crumbled
2-3 green onions, chopped
2 celery ribs, finely chopped
2 Tbsp. diced pimiento, drained
3/4 tsp. salt
1/4 tsp. ground black pepper
1/2 c. mayonnaise
1/2 c. sour cream
1. Cook potatoes in boiling water over medium heat 15 minutes or until tender. Drain and let cool slightly.
2. In a large bowl, add potatoes, bacon, green onions, celery, pimiento, salt and pepper. Toss to coat.
3. In a small bowl, stir together mayonnaise and sour cream until blended. Pour over potato mixture, tossing gently to coat.
4. Cover and chill at least 1 hour.
