Gluten-Free Bacon-Covered Maple Donuts
There is a donut shop in my hometown, Portland Oregon, called Voodoo Donuts. They are famous for their outragous concoctions of donuts. Their selection includes Trix donuts, Cocoa Puffs donuts, and gummy bear donuts, but they are most famous for their bacon-covered maple bar.

My husband and I frequented Voodoo on rare occasions, because the line of people is usually wrapped around the block, at both locations. But on the occasions when we made it through the door...ahhh. Spectacular. *This was before my celiac diagnosis* I, myself, have never tried the bacon maple bar, but my husband loved them and asked me to make a batch so I decided if I make them, they must be gluten-free! I despise rolling out dough, so I opted for the much easier donut in the donut pan.
I knew someone out there had to have made these. I found so many recipes but none were gluten-free, so here is an adapted version from a compilation of recipes found.
- 2 cups all-purpose gluten-free flour
- 3/4 cup cane sugar
- 2 tsp baking powder
- 1 tsp salt
- 3/4 cup milk (I used 2%)
- 2 eggs
- 2 tsp vanilla
- 2 tbsp butter, melted
- 1 1/2 cups confectioners' sugar, sifted
- 2 tbsp Pure maple syrup
- 1 tsp pure vanilla extract
- 3 tbsp milk (I opted to increase milk, and leave out the butter)
