Bacon?? On a healthy eating post??

Yup.  Good morning blog friends! I haven’t had bacon in forever, but the other day at the grocery store I developed a craving for it.  It’s unusual because I don’t typically like to eat pork products (pork tenderloins, pork chops, etc).  Something about it creeps me out.  Possibly the fact that I used to have a pet pig? (RIP Sammy).  But anyways, I happen to be craving some bacon so I borrowed an idea from my momma about how to make the flavor go a long way.

I took one piece of Nitrate Free Bacon and used scissors to cut it up into little pieces and threw them in my pan.  I let those bacon bits sizzle for a few minutes before adding my peppers, onions and spinach.  The bacon provided more than enough grease, so I actually used a paper towel to dab some out of the pan.
