Baked Acorn Squash

Baked Acorn Squash 


This is one of my favorite recipes in the winter. A hardy side to any roast or stew you may make.  You will need:

 


1 Acorn Squash
a dollop of butter per squash half
2 tablespoons of brown sugar per squash half
2 tbl spoons of maple syrup
A pinch of salt, pepper, cilantro

 

How to make
Cut your squash in half, and scoop out the guts. Pre Heat the oven to 400 degrees. Place each squash half on a cookie sheet. Score the insides of the squash. Add all of your ingredients into the center of the squash. Bake uncovered for an hour or until the squash is very soft. The tops of the squash should turn a little brown. One thing that  like to do from time to time is put a pepperoni in the middle of the squash along with the other ingredients before you bake it. The pepperoni adds a bit of spice. That’s it. Eat up and enjoy. This is a rib sticking good meal. You can use this recipe with many different squash too. Just make sure that the squash is really soft when you are finished baking.
