Baked feta and dill stuffed mushrooms

I bought dill the other day with no real idea what to use it on. As luck would have it I came up with this delightful feta and dill stuffed mushroom recipe. These can be prepared quickly and cook for about 10 minutes in the oven. 

Serves 2

Ingredients

  • 2 portobello mushrooms, cleaned and stems removed
  • 1/4 cup fresh dill, cleaned
  • 1/2 cup feta (save a little for topping the mushrooms)
  • 6 pita chips
  • 3 sundried tomatoes

Instructions

  1. Preheat an oven to 400 degrees
  2. Place mushrooms on oven safe tray and spray with olive oil
  3. Mix together dill, feta ( save a little for topping the mushrooms), pita chips, and sun dried tomato in a magic bullet or blender
  4. Fill each mushroom with mixture from above and add just a bit more of the feta on top
  5. Cook in oven for 10 minutes
