baked kale chips and thoughts on nutrition

i joked with james this past weekend that i am going through a lifestyle revolution. i distinctly remember arguing over the price of organic tomatoes 5 years ago: james gently trying to tell me about the importance of eating organic when you can (especially if you're eating the skin of the fruit or vegetable), while i stubbornly and ignorantly said i had survived this long without organic food and anyway, it was too expensive to eat that way.
you see, i grew up on beef and pork, mashed potatoes and corn, pop tarts, cheetos, fanta, candy bars, and doughnuts. a healthy snack was a jell-o cup. no one talked about refined carbs or soy lecithin and if there were organic options at the grocery store, i sure don't remember seeing them.
fast forward a couple of years after the tomato incident, a couple of michael pollan books, a couple of family health scares, and i realized how close-minded i had been. the more i educated myself about the chemicals and additives in processed foods and how eating impacts overall health, the more i realized i wanted to change my habits. historically, i've had a complicated relationship with food and viewed it only in terms of its impact on my weight.
but my new outlook is about putting wholesome, healthy, delicious foods into my body. the benefit being nourishing my body and being healthier for me, for james, and for our future kids. it's not about weight control - it's about living healthy and feeling great. i hope you'll join me as i learn more about healthy eating and more about preparing nourishing foods. i find it really exciting when i can prepare something that is truly delicious and wholesome...

i have been excited to try this quick and easy recipe, so when i spied kale from local farmer's market this weekend i snagged a head. the mr. was pretty skeptical, but let me tell you, he is a believer! these chips are crunchy, flavorful and were eaten in 5 minutes.
i seasoned ours with a dash of sea salt, black pepper, and penzey's garden salad seasoning gifted to us by my friend, meg, but you can use whatever spices strike your fancy. see the recipe below for ideas!
TIP: bake time is the only thing you really need to play close attention to with this recipe. bake until the edges begin to darken and curl, but be careful not to over-bake.

baked kale chips
· 1 bunch kale
· 1 tbsp. olive oil
· sea-salt or flavored salt
1. preheat oven to 300°F. rinse and dry kale. cut off stems and remove center ribs.
2. chop or tear into 1-inch pieces. in a bowl, toss with olive oil and a dash of salt and pepper.
3. line baking sheet with parchment paper. align kale pieces in single layer and bake for 20 minutes, or until crisp.
try seasoning with:
- chili powder
- lemon juice
- apple cider vinegar
