I made up this Baked Mexican Wontons recipe yesterday – I wasn’t sure what to expect, but turns out it is delicious (and definitely boyfriend-approved). I first got the idea of cooking with wonton wrappers from Heidi over at 101 Cookbooks, and they are surprisingly easy to use (no deep fryer necessary!) Although the process can get a bit messy, its totally worth it!
My goal here was to make a Mexican-themed dish that was vegan but could be made non-vegan as well. The great thing about this recipe is that you can substitute whatever ingredients you want – meat, cheese, whatever. If you do use real meat/cheese, though – please use organic!
