BalsamicTofu Eggplant Caprese

Eggplant, tofu, basil three of my favorite food items that we combined into a delicious caprese tower. We whipped up a light, healthy and mouth-watering dinner of Eggplant Tofu Caprese and a Quinoa Kale salad. It was just what we needed and managed to fill us up.

The marinated tofu was excellent and gave a great kick to the caprese.  You didn't need to add extra balsamic unless you wanted to.  Hannah even vouched for the cheese-less caprese she said that with the tofu, she didn't even miss the mozzarella!  Give this a try, you won't regret it!
