Banana Bread, Eian's Favorite

My step son Eian, loves banana bread. His favorite bread, and snack is Banana Bread. Him and I have been making this for a few months now. With a little bit of playing around with the recipe, I have finally found the one. He gobbles this stuff up like candy. This recipe for banana bread is so easy and good you will want to make a new loaf every day. Without fresh pumpkins, and I am out of zucchini, this recipe is great for chilly winter evenings.


4 ripe bananas

1/3 cup melted butter

1 cup sugar

1 egg

1 teaspoon vanilla

1 teaspoon baking soda

dash of salt

1 1/2 cup of all purpose flour

PreHeated oven 350 Degrees

A buttered 4×8 loaf pan


Peal all of your bananas, and put them in a large mixing bowl. Mash them up really well. Add your melted butter, vanilla, beaten egg, and sugar. Mix everything together. Next add your baking soda salt, and slowly add flour. Make sure you stir and mix flour in very well as added to avoid clumps. A sifter works wonders when working with flour. Once mixture is complete, add to a buttered loaf pan. I like to level my batter before I put it in the oven. Once your pan is filled place the pan into your preheated oven. Bake for One Hour, or until a tooth pick can be inserted and pulled out clean. Let cool for about 10 minutes. Remove from the pan, and slice. I enjoy butter on my Banana Bread. Another great addition would be to add some walnuts. Eian does not like them, so we never use them in our bread.
