Banana Compote

Banana Compote 

Ahh, things to do with my overly ripe bananas. I wanted to make something sweet, so compote it is. 
This is an easy recipe, you can make it as sweet as you would like. I like more cinnamon than most, so the recipe is for the correct amount of cinnamon to use, and if you are like me and like it very cinnamony triple the amount. So good. 


  • 2 tblspn. organic butter
  • 3 tblspn. brown sugar
  • 1 tblspn. lemon juice, fresh
  • 2 overly ripe bananas
  • 1 tspn. cinnamon
  1. In medium saucepan on medium heat melt butter, until it is golden brown
  2. Add brown sugar and mix until sugar dissolves
  3. Add lemon juice
  4. Add bananas and mash (they should be very soft, and easy to mash right in the pan, if not mash them beforehand in a bowl)
  5. Add cinnamon
  6. Let mixture come to low simmer, turn down heat to low and allow to simmer about 10 minutes
Compote is best served warm, but you can refrigerate and reheat when you are ready to use.
