Banana Walnut Breakfast Bars

Good morning!

I am constantly on the look out for a delicious, healthy, filling, nutritious, quick and easy breakfast. Is that too much to ask?! Not when you have this recipe!

After our fabulous weekend, I came home to several browning bananas in my kitchen. I love banana bread, but you can only make it so many times, ya know? These breakfast (or really anytime) bars are a very close relative of banana bread, but have a little bit more concentrated banana flavor and a slight granola bar feel because of the addition of whole oats and a very small amount of flour.

They are also packed full of nutrients! Did you know that walnuts are also called "brain nuts?" And not because these little guys actually look like your thinker, but because of all the positive effects they have on brain function. What better to include in your breakfast!?!

These bars are a snap to make. Bake a batch on Sunday and you have breakfast/snacks for the week! Actually that is a lie, they lasted me and Michael about two days. But if you eat them at a normal human pace they might last you a little longer:)

Throw everything but the walnuts and rasins in a mixing bowl and get to work.

Fold in the walnuts and rasins and that's it! Throw it in the oven and go watch the new Mad Men. Are you guys watching Mad Men? I am so happy it is back! I am completely enthralled by Don Draper and his skinny ties. Seriously. Whoops, ok back to the food...

Bake for just about 20 minutes and your got a delicious, nutritious, on the go breakfast! I baked this batch in a bread pan, but when I make the next batch I will use a square baking dish. I think it will bake a little better, but mostly the "bars" became slices when I used the bread pan. Still yummy, but they'll be prettier next time :)

Banana Walnut Breakfast Bars

  • 2 large very ripe bananas
  • 1/2 cup whole wheat flour
  • 1/2 cup whole oats
  • 1/3 cup olive oil
  • 1/4 cup rasins
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1/2 teaspoon baking soda
  • 1/2 cup walnuts, coarsely chopped

Preheat oven to 350 degrees. In a large mixing bowl, mash bananas and combine with flour, oats, olive oil, cinnamon, vanilla, and soda. Fold in walnuts and rasins. Pour into a square baking dish that has been sprayed with cooking spray. Bake 20-25 minutes, until a tester comes out clean. Cool before cutting into bars.
