Best Butternut Squash recipe!

Buttternut Squash is one of my favourite vegetables.  It's rich, full of flavour and can be cooked so many ways!

List of Ingredients :

- 1 butternut squash

- 1 tbsp olive oil

- 1 tsp balsamic vinegar

- 1/2 tsp salt and pepper

- 1 tsp rosemary

My favourite way to cook butternut squash is to start by peeling and cubing the vegetable.  It's best to use one of those peelers in which the blade is perpendicular to the handle.  Trust me, I had the MISERABLE experience of trying to peel squash with a straight peeler, and I swore I'd never do it again.  Luckily my mother and mother-in-law both told me they didn't have any issues peeling theirs, and I tried again! 

After you peel and cube the squash (1inch cubes), mix it all in a bowl with a bit of olive oil, balsamic vinegar, salt, pepper and rosemary.  Add to an ovenproof dish, cover (with either the lid or aluminium foil) and cook in a 350F oven for 40 minutes or until soft.
