Best spicy apple pie with coconut oil crust!

I've been loving all the apples we've been having around lately, and I've made my share of apple sauce and apple butter, but today was time for something new.  Something delicious!  Some good old fashioned apple pie!

I thought about making the dough with coconut oil instead of shortening or butter, but decided to add some butter to the crust to add more flakiness.  I also love spices, especially fall spices (you know, allspice, ginger, nutmeg) and decided to play with those too!  So here goes :

Pie crust :

Makes 2 9" pie crust (with a  bit to spare depending on thickness)

1 cup all purpose flour

2 cups whole wheat all purpose flour

2 tsp brown sugar

1/2 tsp salt

2 tsp cinnamon

1 tsp ginger

1 tsp nutmeg

1 tsp allspice

6 tbsp butter

10 tbsp coconut oil

6-8 tbsp ice cold water

2 tsp white vinegar

1 tsp vanilla extract

 

In a food processor, add flour, salt, sugar and spices and pulse to combine.  Add butter and coconut oil, and pulse until the butter and coconut oil are not larger than the size of peas.  You might need to scrape off the sides of your food processor every once in a while.  Add vinegar, vanilla extract and about 3 tbsp water and pulse.  Slowly add more water as needed until you can form a ball.  Don't overmix.

Take ball of dough, place in saran wrap or a bowl and refrigerate at least 1 hour.

 

Pie filling :

8-9 apples, peeled, cored and diced 

2 tsp cinnamon

2 tsp nutmeg

1 tsp raw sugar

1/2 tsp salt

1 tsp ginger

1 tsp allspice

 

Preheat oven to 400F.  Add apples, sugar and spices to a bowl and mix until apples are well coated.   Take dough out of fridge and using cold water and flour, roll out half the dough.  I needed to work the dough with my hands at first to warm up the oil and add flour to my rolling pin before rolling it out.  Once rolled out to desired thickness (about 1/4" inch), press into 9" pie plate.  Add apples.  You want to make sure your apples are in a heaping mound, as they will cook down!  Roll out the other half of the dough to make the top and place on top of apples.

Using your fingers, press both sides of dough together (you might want to use some water) all around pie plate.  Using a knife, scrape off excess.  Don't forget to poke holes in the pie to allow steam to escape!

Bake in centre of oven for 45 minutes.  Let cool 10-15 minutes before cutting and enjoy!
