BlogHer Cooks: Let us Know What's On Your Thanksgiving Menu and We'll Feature Your Best Recipe Here

Thanksgiving is three weeks away, and cooks all over the U.S. are looking for something special for the menu. This is a meal where people like to plan ahead, even though turkey is usually a given and many families have traditional dishes they make every year. Of course, some good cooks have special holiday recipes they've become known for, and those are the ones we want to know about. Tell us about your Thanksgiving specialty and how to make it, and we'll include your recipe link as part of this post.

There are actually a couple of ways this can work, so whether or not you're a food blogger, you can share in the fun.

First, if you're a food blogger who's already written about your favorite Thanksgiving recipe, just grab the link and leave it in a comment here, along with the name of the dish. I'll come back periodically between now and Thanksgiving to get those links and add them to the body of the post. (I'm going to limit it to one per person and reserve the right to stop adding them to the post if I can't keep up! Too many good recipes would be what my mother used to call "a good problem to have.")

Second, If you'd like to share a great recipe but don't have it posted on your blog, how about posting the recipe on Blogher.com, where any member can blog? Here are instructions for how to start blogging on BlogHer if you've never done it. Once you've posted the recipe on BlogHer, grab the link and post it in a comment here as described above. I'll add those links to the main post as well.

Finally, for people who don't feel like posting a link in one of the two ways above, you're welcome to leave the entire recipe as a comment.

Ultimately, there could end up being a lot of categories for Thanksgiving recipes, but here are a few recipes from some of my blogging friends to get you started.

Cranberry Recipes
--I think the Homemade Cranberry Sauce at Average Jane sounds way above average!
--BlogHer Contributing Editor Maria Niles recommends Joanne Weirs Spice Cranberry and Zinfandel Sauce (link is to a pdf of the recipe which she says is what her family requests for the holiday meal.
Fun and Food Cafe has a recipe for Spiced Cranberry Plum Sauce that really sounds good.

--World's Best Green Bean Casserole from Alanna at A Veggie Venture has a lot of fans.
--The two talented bloggers at Show Me the Curry recommend Spicy Tandoori Cauliflower which I think sounds like a fabulous Thanksgiving dish.

Patricia at Cook Local has a recipe for Local Stuffing that features farro, one of my favorite ingredients!

Vegetarian or Vegan Main Dishes for Thanksgiving

I have to go with this one. It is, simply, the best pie I've ever made. I want to create a new pie every year, but everyone keeps requesting this one again and again.

I could wax poetic about the pastured turkey, brined, stuffed with herbs, tented, roasted to perfection, but my spouse does most of that work. I do the other dishes.

Then again, the cauliflower-chard-leek gratin is darn tasty ...

...for the mention of my vegan pumpkin pie. I did a test run- just to be sure it's as tasty as it could be, such a sacrifice!- and I've been eating it for breakfast all week.

We don't do turkey. For a main dish we usually make my Sweet Potato Black Bean Enchiladas.

Sparkle Grapes! Pluck two

Sparkle Grapes!

Pluck two bunches of red grapes (for a large crowd) off stems. Wash. Put in
a large ziplock and pour in the cheapest bottle of rot-gutty red wine
you can find and stow in the fridge. I like Gato Negro. Let the grapes suck up the fermented
blood of their distant cousins for twelve hours or so. Drain well, then
toss grapes in granulated sugar til coated right before serving.
Excellent with a salty meat appetizer or with turkey.

Pumpkin Cheescake with a sour cream and
caramel topping

This was the winner of a fun little competition I had with my Mom.  She made a traditional pumpkin pie and I made this cheesecake...The cheesecake won and will make a nice change from the traditional pumpkin pie route.  It was very light and I noticed that it turned in to a breakfast food for some.

Now it's a family favorite, and many in this family really only like white foods such as whilte rolls, mashed potatoes, pearl onions, etc. You get it, don't you?

It has a long list of ingredients but it's easy to make. And if you want to serve it as a main course, get a beautiful squash and prebake it and then stuff it in and heat it. Wild rice is gluten-free also so it's good for everyone.

Lima Bean-Corn Pie

Lima beans are a funny food to me.  Kidney-shaped, oddly colored-greened little buggers with a starchy taste that often need a little help in the flavor department.  I always ate my lima beans as a youngster but my siblings used to push them off to the side of the plate. However, now, they do not play with their lima beans anymore at Thanksgiving Dinner...

 

In my quest to find nutrient-dense foods for holiday meals, which would allow me to feel satiated rather than ill, (having rolled-off the dining room chair one too many times feeling unsatisfied), I revisited lima beans. 

 

A good source of B vitamins, fibers (particularly soluble fibers in the form of pectin), iron, potassium and magnesium, lima beans have very little fat. Further, studies suggest that lima beans can help lower LDL cholesterol levels and may have anticancer benefits.

 

I hit upon a Lima Bean-Corn Pie which is now a family-favorite.  Here's the calorie'd-version.  I'll list the lower calorie version on my website here

 

1 pkg. (10 oz) frozen kernel corn, thawed

1 pkg. (10 oz) frozen lima beans, thawed

(If you have access to fresh…wonderful!)

1 cup grated cheddar cheese
3 green onions, chopped

3 eggs

1 ½ cups half-and-half
1 tsp salad herbs

½ tsp salt

1 ready-made 9-inch pie shell

In a bowl combine the corn, lima beans, cheese and onions, mixing well.

In a separate bowl, beat together the eggs, half - and half - salad herbs and salt until well-combined.

Pour mixture over lima bean mixture, blending well.  Spread evenly into prepared pie shell.

Bake 350 degrees for 30-35 min or until pie is firm and lightly browned.

Traditional, Orange-Cranberry and Wine n'
Berry Cranberry Sauce

Hi everyone,

This is my first post here. I'm a chef and food & travel writer.

I'm providing a link to my recipes for traditional, orange cranberry and Wine n' Berry Cranberry Sauces. I came up with the Wine n' Berry Sauce about 8 years ago after alot of experimentation. It's been a family favorite ever since. (I'm a blackberry, blueberry and huckleberry addict lol)

For the record, I use frozen, wild blueblerries available from Trader Joes, but any blueberry should suffice.

While my recipe calls for Cabernet Sauvignon wine-- last year for Thanksgiving, I substituted Blackberry Wine from a vineyard in North Carolina and everyone loved it. Because blackberry wine may be difficult to find, I'm continuing to list cab sav in the recipe.

spicy pumpkin cake with sugared ginger

 

 I just made this pumpkin cake and fell in love with it!  Juicy chunks of crystallized ginger in a spicy pumpkin cake - with whipped cream or hard sauce.  I love the apple pies that show up on Thanksgiving , but this is a really nice autumnal dessert that goes with them beautifully.  I included directions for making it dairy free.
