When her career gave her lemons, Carol Platt made lemon sorbet. She reassessed her options and leveraged her years of experience to create a pathway to a new, more promising career. “I grew up in North Carolina. My parents worked for textile mills and they both had fourth grade education. My mom always wanted me to get an education. When I graduated from high school it was my dream to go to college.
