That's Right folks...you heard me. I don't have a microwave, and somehow I manage to eat. I get it! In this day in age, it's extremely difficult to sit down to eat, let alone WAIT for it to cook on the stove top. I know...It takes a lot of extra effort to place that cold coffee in a small pot, set it on the stove and turn it on and wait.....and... This Cozy Harvest Risotto from Happy.Healthy.Life includes butternut squash, apple, sweet potato, and celery. Kathy bums up the flavors with fresh, seasonal herbs like sage, rosemary, and thyme. Then she tops this vegan risotto with almonds (and a splash of non-dairy creamer, if you want it) for what she calls "an elegant and surprisingly easy winter meal."
For Thanksgiving this year my mom made an awesome upside down cranberry-date-pecan coffee cake. Ever since then I’ve been craving that cranberry + dried dates combination, and I’ve thought about whether or not I want to make that cake. It is a food that always makes an appearance in some form whether it is in a casserole, is steamed, or mixed with a vinaigrette.
