I don't like to cook, but I have to

For me, the largest struggle of adulthood has been feeding myself. I don’t enjoy cooking, I try to eat as many raw things as possible, and I eat out as much as I can afford to. However, I’ve come to the point where I have to admit that this is not fiscally responsible. And it’s not really healthy either. I do think I make healthy choices when I eat out, but it’s cold and flu season and as much as I trust the health department and general food worker, germs still happen....more

It’s a bittersweet moment in my kitchen when we move from summer into fall/winter. It’s time to get out the crockpot and start making those warm comfort foods, yet we usually put away all our favorite grill recipes for a few months.  ERRRRT… hit the brakes. I am on such a big spaghetti squash kick right now that I wanted to bring my readers another variation of this great fall/winter food.  Spaghetti squash is higher in carbs and sugar than I feel comfortable eating frequently, but the buttery "noodles" are really hard to resist right now.  It is such a versatile vegetable that you can use the squash with almost any ingredients and it will taste great.  Today's recipe would be perfect for Sunday breakfast or brunch or even dinner; it is hearty, creamy and filling as well as a great vegetarian option if you don't want meat....more
