Eating Vegan With Non-Vegan Friends

Vegan Loaf

I've been thinking about putting together a class called something like, "A Vegan is Coming to Dinner. Help! What Do I Feed It?" I think there are lots of people out there who have new vegans in their lives, whether it's friends, or co-workers, or kids coming home from college. It can be confusing, I know. And I think a simple one or two day class could do a lot to fill in some of the blanks for people who are used to centering a meal around a piece of meat.  Read more >

A Recipe for Vegan Pesto Cashew Ricotta Pizza

Pesto Cashew Ricotta Pizza

[Editor's Note: Pizza is one of the things I consider to be really tough to make vegan—I'm pretty much wedded to the idea of creamy cheese on my slices. But this recipe, which uses cashew cheese to achieve ultimate creaminess, and that features lots of other bold flavors, looks beyond satisfying and delicious. I can definitely see serving it to vegan or non-vegan friends! --Genie]  Read more

Great Appetizer Idea: Individual Seven-Layer Dips

Individual Seven-Layer Dips

[Editor's Note: Here's a great way to take a traditional appetizer and make it more convenient for your guests, while making it prettier along the way, too! I love the idea of these small cups of dip, which both provide excellent portion control and give everyone a better view of the layers that make this distinctive appetizer what it is. --Genie] Individual Seven-Layer Dips  Read more

Smoky Eggplant Couscous With Feta

Eggplant with Feta

[Editor's Note: Many people feel strongly about eggplant—I happen to be one of the people who feels strongly in favor of it. This recipe highlights it well, but uses cumin and smoked paprika for a slightly Middle Eastern, smoky edge to the dish. Plus, I love adding dishes to my repertoire that can be on the table quickly on busy weeknights, and this definitely qualifies! --Genie]  Read more

Winning The Food Stamp Challenge And Eating Well

Food Stamp Challenge Dinner

This week, Mario Batali made news as he announced how hungry he has been while taking the Food Stamp Challenge, an effort to make it through the week while spending no more than $31 total for all 21 meals and any snacks. Batali and his family are discovering how hard it is to fit meat into one's diet at the low price-per-meal covered by food stamps, and they're reportedly eating lots of rice and beans and peanut butter and jelly sandwiches. But Rachel Bolden-Kramer of Hip Dhamma is also taking the challenge alongside Batali and his family, I love her approach, which focuses on whole and healthy foods, as well as on guaranteed money-savers like looking beyond the grocery store.  Read more

Simple Buttermilk Yogurt with Mango-Pistachio Topping

Strained Buttermilk Yogurst

[Editor's Note: Like A Sweet Spoonful's Megan Gordon, I was quite taken with Tamar Adler's recent book, An Everlasting Meal. Though this simple breakfast dish is not inspired by the book itself, it's certainly inspired by its philosophy of economy and simplicity when it comes to food. It doesn't hurt that it's delicious and quite healthy, too. --Genie]  Read more
