For the love of all things warm and in a bowl, I have another soup for you today. When I need to throw together a meal in a pot, this is my go-to soup and if I’m on my game, I’ll have half the ingredients already sitting around my house. If my cupboard is well stocked I’ll have several large cans of tomatoes (diced, crushed, whole plum, whatever) alongside white beans and broth. The kale seems to come into my life in a constant flow whether its via my CSA or my good intentions at the store. After enjoying Black Bean Masa Cakes, I was excited to try using the super simple masa dough in a different recipe. For Toasted Hummus Pockets, I filled the masa dough with tasty hummus, then baked the “pockets” until golden. Today I feel quite scattered, a little stressed-out, and most definitely pulled in several different directions at once... and this is in spite of the fact that I took two vacation days last week and am therefore just now wrapping up a five-day weekend. After running around all over town for meetings and
errands and then getting home and trying to extinguish several (figurative) fires that popped up unexpectedly in my absence, I find myself in a rather weary and discouraged space this evening.
Apparently I need a break after my break.
Last week I shared my longtime affection for butternut squash, and I guess I still have squash on the brain because the Meatless Monday recipe that caught my eye this week is Roasted Butternut Squash and Black Bean Enchiladas from Reluctant Entertainer. Sandy serves this with a green salad and some extra sour cream and cheese on the side for people to add at the table, and I'm sure there are plenty of compliments when this is on the menu for guests.
