Whether you have houseguests and want to make a breakfast that will impress, or you'd just like to have something nutritious to feed the kids after opening presents, breakfast casseroles can be perfect for the holidays. What's a breakfast casserole? There are endless variations, but it's a baked dish that usually includes eggs, and may or may not include other ingredients like bread, potatoes, tortillas, cheese, bacon, sausage, or mushrooms.

One reason this type of one-dish breakfast is so popular is because most can be made ahead and kept in the fridge overnight and then baked the next morning, and some are even cooked in a slow cooker. Breakfast casseroles don't need a lot of careful watching or fussing over the recipe; just about anything that tastes good with eggs can be added. Here are a few breakfast casserole combinations that sound good to me, but if you have a good breakfast casserole recipe, please share in the comments.

Love breakfast casseroles, but I don't make them nearly often enough. Thanks for this great compilation of recipes. They are definitely not just for breakfast anymore! ;-)

My mom used to call it Farmer's Breakfast. Using an electric skillet she'd fry up sausage and potatoes in the skillet, toss in onions, bell peppers, and whatever else she felt like adding. Then pour the scrambled eggs in and toss in some shredded cheese as well, filling it almost to the top. Yum!

It's a lot like a strata.  It's so good.  It has a puff pastry top, and is filled with layers of pesto, sausage, ricotta cheese and roasted red peppers.  I'm actually not sure if it was meant to be served as breakfast, but I like to get up a little earlier than everybody else, brew a large pot of coffee, and have the house fill with the smells of this gorgeous dish.  We eat it before, during, and after the present-opening process!

The recipe came from a cookbook that I got for Christmas one year called Favorite Brand Name Old-Fashioned Holiday Recipes ( http://www.amazon.com/Favorite-Brand-Name-Old-Fash... ).  I adore this cookbook.   The whole brand name thing gets a little annoying at times, but oh man, some of those recipes are soooo darned good!

My favorite breakfast casserole is in Elaine Magee's Food Synergy book. It is a vegetarian (not vegan-sorry) breakfast sausage casserole. I may have to make it over winter break.
