Bruschetta with Goat Cheese and Bacon Onion Chutney

Brusheta with Goat Cheese and Bacon Onion Chutney

This is an appetizer to impress. Crisp bruschetta slathered with tangy goat cheese and a smoky savory chutney.

1 long French baguette

¼ cup olive oil

½ cup goat cheese

½ cup cream cheese, softened 

2 cups Bacon Onion Chutney

Sprigs of fresh thyme for topping and garnish

1. Preheat oven to 400 degrees.

2. Cut baguette into thin slices and brush with olive oil. Bake in oven for 5-7 minutes. Keep an eye on them and snatch them out when they are brown on the edges and beginning to crisp.

3. Stir goat cheese and cream cheese together in a small mixing bowl.

4. Spread baguette slices with goat cheese mixture and top with a generous dollop of Bacon Onion Chutney.

5. Remove some of the thyme leaves from their stem and sprinkle on top. This gives a nice color contrast and also marries up with the chutney ingredients.
