Buffalo Chicken Sandwiches



2 lbs boneless, skinless chicken breast
1 box sodium free chicken stock
1 tsp salt
1 tsp pepper
1 tsp garlic powder
1 tsp onion powder
1 bottle Franks Red Hot Buffalo Wing Sauce
1 stalk celery, diced
Bleu Cheese dressing, I used Marie’s Low Fat Bleu Cheese dressing


Using a crock pot, pour in chicken broth and spices, stir to combine. Add chicken breast and cook on low 8-10 hours.

Remove chicken from the crock pot into a large bowl or a cutting board. Discard the broth. Using a fork shred the chicken and return to the crock pot. Pour buffalo sauce onto the chicken, mix to combine and let cook on warm or low (whichever setting you have on your crock pot) for about 30 minutes.

Serve on hamburger buns. Layer chicken, celery and bleu cheese dressing.
