Butternut Squash

Since I've been married and my husband has been working quite a lot, I've had to start cooking much more. Cooking is not something I've enjoyed in the past, but I felt bad that my husband was eating cafeteria food at the hospital where he works. We all know that hospital food is the worst. If I was going to start making food, I wanted to not only do it right, but I wanted to make it fun. Life is too short to not enjoy doing even the simple mundane things in life, so you might as well make it fun! While I cook, I jam to my pandora stations. Right now I'm addicted to Counting Stars by One Republic. I shake my booty and play with different ingredients to make cooking more exciting. Ava at least seems to like watching mommy dance and sing around the kitchen as she sits in her bouncer. I've decided to share the ones that I've come up with that my husband and I both love, and hopefully anyone who's reading this will too. :) Here's the first recipe I came up with:

Butternut Squash Mashed Potatoes

Ingredients:
Two-four potatoes halved
1/2 butternut squash cubed
1/3 stick of butter (or to taste)
1/3 reduced fat philedalphia cream cheese
Splash of 2% milk
2 sprigs of Rosemary
Salt and pepper to taste
Splash of apple cider vinegar
 
Directions:
1. Boil potatoes and squash with 2 sprigs of rosemary and a splash of apple cider vinegar.
2. Drain and put back into pot, all ingredients ( fish out the rosemary to put back in)
3. Mash together
4. Mix together the rest of the ingredients
5. Serve and enjoy! :)
