Butternut Squash, Kale, and Sunchoke Salad from Food for Vitality
In Utah, there's no telling what kind of weather we'll be having at this time of year, so this Butternut Squash, Kale, and Sunchoke Salad from Food for Vitality is a perfect Meatless Monday dinner, since it can be eaten hot or cold. There's a hint of Southwestern flavor from ground chiles, coriander, and cumin used to season the vegetables before they're roasted, and some added flavor from minced garlic in this nutritious dish.
