Celery Garlic Bruschetta

Celery Garlic 'Bruschetta'


My homemade potato soup was almost ready and I realized we didn't have any crackers! I went into full-blown Chopped episode mode and created this on a whim. Turned out to be a hit and seemed way more thought-out than it actually was. Delicious alternative to traditional bruschetta.


1 stalk of celery, diced
1/4 small onion, diced
2 cloves garlic, finely chopped
2 tbsp extra virgin olive oil
1 tbsp white wine vinegar (or any you have on hand)
1/2 tsp white sugar

Shredded parmesan
Salt & Pepper
Chopped parsley

Sliced baguette or crostini

Preheat oven to 425 degrees F.
In a small bowl, combine all ingredients. Spoon onto sliced bread or crostini and then top individually with parmesan, salt, cracked pepper, and parsley.

Bake for 8-10 minutes until golden and crispy. Great side for homemade potato soup.
