We liked them. And I remember thinking that I could probably swap out the pumpkin for sweet potato, depending on what I had on hand.

Yep. Or butternut squash. Confession: one time I didn't have enough pumpkin for a pie so I added butternut squash puree. No one knew. lol

Look online for cookbooks from New Zealand. Those Kiwis do some magical things with pumpkin that are really yummy.
