Admittedly I'm a well-documented chickpea fan, so when I saw these Chickpea Cakes with Cucumber-Yogurt Sauce from A Veggie Venture, I immediately bookmarked them as a fantastic Meatless Monday recipe idea. Mashed chickpeas are combined with flavors like garam masala, cayenne, green onion, and cilantro, and then fried until they're crisp and served with the flavorful yogurt sauce. This sounds delicious to me, and if you sub ranch dressing for the yogurt sauce you might even get the kids to try it!
