Chile Masala Tofu Scramble: Breakfast for Dinner Vegan Style

Lots of things that are traditionally thought of as breakfast foods taste great for lunch or dinner as well, and Janet from The Taste Space made this Chile Masala Tofu Scramble for a delicious meatless lunch. She used Chinese soft tofu paired with red bell peppers, mushrooms, Aleppo chile flakes, soy sauce, and Indian spices, and finished with a handful of fresh spinach. I like all these spicy flavors, and this tofu scramble sounds like a Meatless Monday meal that would really make your mouth pay attention.
