If you're living in one of those parts of the world where the weather is steamy-hot right now, I bet you can understand the appeal of this tasty-sounding Chilled Tofu with Scallions and Soy Sauce from Fifteen Spatulas. In my mind, these are the perfect flavors to dress up tofu, and I love the idea of eating it chilled. Joanne says, "I eat this dish all the time in the summer and I swear it’s more refreshing than a popsicle on a hot day." I believe her, and this sounds like a perfect Meatless Monday dish for this time of year.
