Chinese New Year - Time for homemade fortune cookies

Last night my 11 year old son took a cooking class. The class was titled "Chinese New Year Recipes." He was so excited and could not wait to attend. On the other hand, I was worried that it may not live up to his expectations. I was wrong. Not only did he have a fantastic time but he came home with several recipes for the items he had made. Each one of these recipes were delicious and easy to make. Honestly, I was extremely surprised.
One of the recipes they made was fortune cookies. Again I am not sure why I should be surprised by that and the class was designed around a Chinese new year theme. I had never tried making them, and I never thought about how easy they are to make. They are incredibly simple as you can see in the following recipe:
