Chipotle Spiced Posole (Hominy) with Sage Pork Recipe

Posole—hominy, dried maize kernels—is a traditional Mexican dish from the region of Jalisco. Recipes and method of cooking will vary; some recipes will use the already cooked and canned hominy. This recipe begins with cooking the hominy from scratch. The flavor of this stew/soup recipe is enhanced with cream sherry, tequila and the spice from chipotle in adobo sauce and pickled serrano peppers.
