A Healthy Version of Chocolate Chip Banana Pancakes? They're Delicious Too

These chocolate chip, banana pancakes are HEAVY! Very heavy!

Now by heavy, I don’t mean they make you feel heavy…they ARE healthy (kind of) … they are loaded with fiber, omega-3s, vitamin E, calcium, magnesium and copper from the almond meal and flax included in the mix…

but they feel like they weigh more than your regular white flour pancake!

might have been the bananas…

or the extra chocolate chips that “accidentally” spilled into the mix…;)

They started off as an experiment – one I was initially not gonna document here…but, after a couple of burnt, runny, EPIC-fail batches, I got the thumbs up from #1 guinea pig taste tester!

Chocolate Chip Pancakes

Ingredients:

1/4 cup almond meal

1/4 cup flax

1/2 cup unbleached, white flour

1/4 cup brown sugar

Dash of salt

1 teaspoon baking soda

1 teaspoon baking powder

Pinch of salt

1 teaspoon vanilla

1 cup almond milk

1 egg

1 individual serving size plain Greek yogurt

1 mashed banana handful or two of chocolate chips (semi sweet or milk depending on preference – i used milk chocolate)

Directions: Start by combining all the dry ingredients in one bowl. Then mix the vanilla, almond milk and egg till well combined, in a separate bowl – pour this into the bowl with the dry ingredients and mix well. Slowly fold in the greek yogurt – then add the mashed banana and chocolate chips.

Drop 3-4 tablespoons (makes about a 3.5 inch pancake) into a hot pan – but make sure the flame/setting is on low – and cover and let cook for 3 minutes on each side. The first few times, I had the setting on high and the pancakes got burnt; when I failed to cover them – they did not get thoroughly cooked in the center and were very hard to flip …did I mention I had a few epic-fail batches…?

We had about 9 pancakes from this mix. We chose to eat them with sliced bananas and extra chocolate chips instead of syrup I mean can one really ever eat too much chocolate?… wait.. never mind…don’t answer that :)
