Chocolate Chip Cookies (Grain-Free and Sugar-Free)

These cookies make me happy. They are easy. Delicious. Grain-free. Dairy-free. Sugar-free. And, they taste like real chocolate chip cookies — the soft ones. You can use any chocolate chips that you like. I used a good-quality dark chocolate chip in this batch, but carob chips work well as do almost any kind you have on hand.

The sweetness of the cookies comes from dates. The bulk comes from nuts; I like to use pecans because they are inherently sweeter than many other nuts. Also, you can feel free to add in whatever superfoods you like — chia seeds, hemp seeds, goji berries, etc. But rest assured, even without any extra superfood additions, these cookies are good for what ails you. And not only because chocolate chip cookies make you smile…

Pecans are good for energy. They strengthen the lungs and help stop coughs. It’s good to eat pecans if you are having lower back pain or constipation. Beware of eating too many, however, if you are experiencing diarrhea.

Dates are rich in both dietary fiber and tannins. Fiber is good for your gut and tannins help the body fight  inflammation and infection. Dates are also rich in vitamin A and iron.

I buy my dates already pitted which really does make things much easier…

If you can find raw pecans, please buy them…

Put the dates and the pecans in a food processor and process until the mixture is pretty smooth…

Then add eggs, baking soda, vanilla and salt…

Here’s where you can feel free to add in chia seeds…

Hemp seeds…

Or goji berries or raisins or dried cherries or cranberries…

Whiz it all up until it’s nicely blended and sticky…

Then put the dough into a bowl and add the chocolate chips…

Spoon the dough onto a few baking sheets…

And bake them until they are golden brown (I like mine a little burnt, but I realize I’m in the minority here…).

Serve with a cold glass of almond milk. Enjoy!

Chocolate Chip Cookies (Grain-Free and Sugar-Free)
(makes 2 dozen)
recipe gratefully adapted from:

24 pitted dried dates
2 cups raw pecans
2 eggs
2 tsp vanilla extract
1/2 tsp baking soda
1/4 tsp fine sea salt
5 oz chocolate chips (use dark, carob, or any kind you like)
optional add-ins: 2 tsp chia seeds or 2 tsp hemp seeds or a handful of goji berries, raisins, dried cherries or cranberries

Preheat oven to 350 degrees.

Put the dates and the pecans in a food processor and process until smooth. Add eggs, vanilla, baking soda, salt and one of the optional add-ins if you like. Whiz it up until it’s all blended together and a nice sticky dough forms.

Cover 2 large baking sheets with parchment paper. Spoon 12 balls of dough onto each sheet. Bake for 5 minutes and then press the cookie balls down a little with your hand or a spatula to flatten them a bit. Bake an additional 4 to 7 minutes, or until they are golden brown on top. Be careful, because the bottoms burn easily (I like the burnt bottoms though…). Enjoy!
