Chocolate Chip Pumpkin Cookies

This yummy recipe was submitted by Courtney from Zionsville, Indiana. I have made these too, and my whole family loves them. Enjoy!

Ingredients:

  • 1 can pumpkin
  • 1 cup white sugar
  • ½ cup vegetable oil
  • 1 egg
  • 2 cups flour
  • 2 tsp. baking powder
  • 1 ½ tsp. cinnamon
  • ½ tsp. salt
  • 1 tsp. baking soda
  • 1 tsp. milk
  • 1 TBL. vanilla extract
  • 2 cups chocolate chips

Preheat oven to 350°. Combine pumpkin, sugar, vegetable oil & egg. In a separate bowl, stir flour, baking powder, cinnamon and salt. Dissolve the baking soda with the milk and stir in. Add flour mixture to pumpkin mixture.

Add vanilla and chocolate chips.

Drop by the teaspoonful on a baking sheet. Bake for 8-10 minutes. These cookies will have a soft, cake-like texture. They will not be crisp like regular cookies. I sometimes cook mine a little longer just so they won’t be too soft and falling apart.
