Chunky Marinara

Chunky Marinara Sauce

I have always wanted to try ground turkey, because I am not a huge red meat eater. But, I could never convince my husband to give up his beef and replace with a healthier alternative. So I decided to just do it. First, we tried Turkey burgers; lucky for me little Miss will eat anything. He enjoyed them, but still wasn't wanting to make the switch permanent. Ahhh. A compromise; beef twice a week.

I experiment with new meals when my husband travels; since Amelia and I love our veggies, poultry and whole foods, it's a good time to see how many of those things I can slip into one meal. Amelia wanted spaghetti, so I decided to attempt my own sauce and use our ground turkey.

  • 8 small tomatoes, chopped
  • 1 tblspn. water
  • 1 tbslpn. olive oil
  • 1/4 c. fresh basil
  • 2 garlic cloves, minced
  • 1/2 tblspn. dried oregano
  • 1/2 tspn. salt
  • 1/2 tspn. pepper
  • 1 sm. onion, chopped
  1. Place tomatoes, olive oil and water in small saucepan, cook until tomatoes are very tender, over med heat
  2. Add basil, oregono, salt, pepper, garlic, and onion to saucepan, bring to a boil
  3. Turn heat down and let simmer for 20-30 minutes
This was my first time making my own marinara and I have to say, I will never buy sauce in a jar again. This was fantastic! We served ours over ground turkey and gluten free rice spaghetti.
Simmering..look at those chunks and spices....hmmm Good!
Dinner for two! Chunky Marinara, with Ground Turkey over Rice noodles
More for later!
