This is an amazing recipe adapted from a Dreena Burton homestyle chocolate chip cookie recipe (Vive le Vegan, page 131). You can use non-dairy chocolate chips and it's vegan. I first made this with dark chocolate chips (as pictured), but they were 60% cacao. I made them the second time with chopped dark chocolate, 72% cacao. Use the darkest chocolate you can handle. Makes about 1 1/2 dozen cookies.
Ingredients
- 1 cup spelt flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 teaspoon fine sea salt
- 2/3 cup pure maple syrup
- 1 tsp vanilla extract
- 1/4 cup canola oil
- 2/3 cup chopped dark chocolate (at least 70% cacao)
- 1/2 cup chopped walnuts
Preheat the oven to 350 F. In a large bowl, mix together the spelt flour, baking powder, baking soda and salt. In another bowl, combine the maple syrup, vanilla and canola oil. Add the wet stuff to the dry stuff, and mix until combined. Stir in the dark chocolate and the walnuts.
Use a small scooper to drop even scoops of batter onto a cookie sheet covered with a silicone non-stick baking pat or wax paper. Bake for 11 minutes.
