Coconut for Life's Journey

I do a lot with coconut--a lot. I guess you can call me an addict. So when a blogleague (colleague+blogger) issued the call for posts of recipes from a cookbook whose co-author had been diagnosed with cancer, I answered.
What strikes me about Sarah's story of cancer is how freely she shares her personal story, thoughts to herself and candidly, with the no BS approach we all need to call upon whenever (and hopefully never!) we're faced with health challenges.
So vegan coconut cream pie, tweaked with additions like Meyer lemon zest, lemon verbena sugar and my favorite (since we're going vegan here....): Tofutti.
