Griffin's Lobster & Eggs From the Author of The First Husband

I’ve always loved that quote about cooking. For one thing, I love mostly everything Julia Child says. For another, Julia gives great advice on how to approach not only cooking -— but love.
This might be why I kept her quote over my desk as I was working on my most recent novel, The First Husband -- in which Annie, a travel writer, meets and marries a chef named Griffin shortly after she endures a painful break-up.
I knew early on in the writing of the book that I wanted to make Griffin a chef -— and the kind of chef whose food people fall in love with. I wanted Annie to fall in love with it -— and with Griffin for bringing the kind of passion and care to their relationship that he brings to the kitchen.
How was best to make sure that Griffin was that kind of chef? I found myself up at 3 AM testing out Griffin’s recipes to make sure they were executed just right and thoroughly delicious. Yes, I’ve cooked everything Griffin makes in the book, including his famed Lobster and Eggs -— which he makes for Annie the first night they meet. The dish leaves quite an impression on her. As she describes them:
They were totally and completely delicious. The single most delicious thing I had ever tasted. I’d tasted all sorts of things that had competed for that ranking -— a mustard-coated prime rib in Salzburg, Germany; blowfish in Kyoto; chocolate-covered crickets in Nova Scotia -— but nothing like these eggs. How do you describe something that good? They tasted like cotton candy, but the egg version. They were creamy and rich and they melted as soon as they touched my tongue, as soon as I tasted the sea-salty edge of them.
And perhaps its because of how much Annie loves them, but I get more questions about how to make the salty and sweet concoction than almost any other single question asked of me about The First Husband —- except, of course, where a reader can find Griffin in real life!
Finding Griffin in real life is a harder bargain.
But the recipe for Griffin’s fantastic Lobster and Eggs is something I can help with. I’ve included it below. Let me know how they turn out!
Griffin’s Lobster And Eggs Recipe
2 tablespoons half-and-half
1 tablespoon unsalted butter
yellow onion finely chopped
5 oz lobster meat
Salt and freshly ground black pepper
In a small bowl, whisk together eggs and half-and-half (you can also use whole milk). Melt butter in a skillet over medium heat. Add onions and sauté until translucent and starting to crisp (approximately 4 minutes). If you have veggies on hand (red peppers or tomatoes are great adds), sauté with the onions.
After the onions are cooking, add the eggs and scramble. As the eggs start to set, add the lobster meat and cook for an additional two minutes. Remove from heat.
Season with salt and pepper to taste.
Garnish with chives and caviar (optional)
Serve immediately (mandatory)
